How to Make Sausage and Veggies Sheet Pan ?

Sausage and Veggies Sheet Pan meals are easy, go to meals, especially when you can’t decide what’s for dinner. This meal is packed full of nutrient dense vegetables, low in carbohydrates, and keto friendly. It has just the right amount of seasoning and is sure to be a hit with any crowd.

Using traditional kielbasa makes this recipe high in sodium, so look for a low sodium option at your local grocery store. By choosing a lower sodium option you can increase the health benefits of this recipe.  Keeping your sodium intake low in your other meals for the day if you are planning on making this dish is also a good idea. 

Easy Steps for Making Sausage and Veggies Sheet Pan:

  • Preheat the oven to 425 degrees.

If you have a roasting option on your oven now is the time to use it. This feature helps circulate air while the food is cooking and helps it cook more quickly and evenly. This is a newer feature that many ovens don’t have, but if you do have it, I promise you will love it. I had to replace my oven last year and have noticed a huge difference in baking times when I use the roasting option.

  • Chop sausage and vegetables into 1 inch pieces. For the vegetables that take longer to roast like carrots and potatoes, cut them into ½ inch pieces.

The other good thing about this sheet pan meal recipe is that you can use any types of vegetables that you have on hand. Other squashes, like butternut or acorn, sweet potatoes, and green beans are all good options. Use what you have on hand. This is the perfect easy meal for the home gardener. It provides a hearty meal that helps use up those random pieces of produce. I am a member of a produce co-op that buys produce in bulk and then divides it among members. Doing this helps us save money, but there are some weeks where I get one or two random beets, and this is the perfect recipe to help me use them.

  • Put everything in a large mixing bowl and drizzle with oil, salt, pepper, seasoning, and garlic. Mix well.
  • On 2 lightly greased cookie sheets, divide and evenly spread out.

Ingredients:

  • 1 package or 1 lb. sausage-preferable low sodium
  • 2 Bell peppers
  • 3 Carrots 
  • 3 Potatoes
  • 2 Zucchini
  • 1 small head of broccoli
  • 1 small head of cauliflower
  • 1 onion
  • 3 Tablespoons oil
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 2 Tablespoons Italian Seasoning
  • 2 cloves minced garlic

Instructions:

  1. Chop sausage and vegetables into 1 inch pieces. For the vegetables that take longer to roast like carrots and potatoes, cut them into ½ inch pieces.
  2. Put everything in a large mixing bowl and drizzle with oil, salt, pepper, and seasoning. Mix well.

  4. Bake for 30-45 minutes, stirring every 15 minutes until all veggies are cooked through. 

Note:

My whole family loves when I make this meal. I originally started making it a few years ago when I was pregnant with my youngest child. I had gestational diabetes and needed easy fast meals that were low sugar and low carbohydrate. This sausage and veggies sheet pan meal quickly became a part of our weekly meal rotation. I don’t make it as frequently as I used to, but we still have it on a fairly regular basis.
