Oatmeal is not only high in fiber and other nutrients, it is also shown to help lower blood pressure and cholesterol when eaten regularly.

·        In a small to medium sized mixing bowl, mix 1 cup of quick rolled oats with 1 cup of buttermilk. Let stand for 30 minutes.

·        Preheat the oven to 350 degrees.

Because of this resting time, it’s a good idea to make these when you are baking something else. It is easy to throw them in the oven after you are done baking a casserole or lasagna for dinner in the oven.  That way you don’t have to preheat the oven twice and you have dinner and breakfast done at the same time. If you are in a hurry the full 30 minutes isn’t necessary, but it gives the oats more time to soften.   

Easy Steps for Oatmeal Muffins Recipe –

  • In a separate bowl combine 1 cup flour with 1 teaspoon baking powder and ½ teaspoon baking soda.

If you live in a humid climate, make sure to sift these dry ingredients to prevent any clumping.

When the dry ingredients are combined add ½ cup dried fruit of your choice.

Dried cranberries and/or blueberries are a favorite at our house. 

  • Then add 1 egg, 1/3 cup oil, and 1/3 cup brown sugar to the oatmeal and buttermilk mixture.
  • Combine wet and dry ingredients until just incorporated.
  • Scoop into greased muffin tin or lined muffin tin and bake for 10-15 minutes until baked through, being careful not to over bake them. Let cool and enjoy!

As mentioned earlier this recipe can be altered to accommodate personal taste. Here are a few ideas:

·        Spiced Apple Oatmeal Muffins-Add 1 ½ teaspoons cinnamon, ½ teaspoon ground ginger, and ½ cup grated apple or ½ cup diced dried apple

·        Blueberry Lemon-Add zest of one lemon, ½ cup dried blueberries and juice from ½ the lemon

·        Cranberry Orange-Add zest of one orange, ½ cup dried cranberries, and 1 teaspoon orange extract

 Made with ½ cup dried cranberries, these muffins are 148 calories each. By trading out white flour for whole wheat flour you double the fiber from 1g per muffin to 2g.

  • 1 cup Quick Rolled Oats
  • 1 cup Buttermilk
  • 1 cup Flour
  • 1 cup Quick Rolled Oats
  • 1 cup Buttermilk
  • 1 cup Flour
  • 1 teaspoon Baking Powder
  • ½ teaspoon Baking Soda
  • ½ cup Dried Fruit
  • 1 Egg
  • ⅓ cup Oil
  • ⅓ cup Brown Sugar

Instructions for making Oatmeal Muffins Recipe:

  1. Combine oats and buttermilk. Let sit for 30 minutes.
  2. Preheat the oven to 350 degrees.
  3. In a separate bowl combine flour, baking powder and baking soda.
  4. Add dried fruit to dry ingredients.
  5. Add egg, oil, and brown sugar to oats and buttermilk.
  6. Add dry ingredients to wet and mix until combined.
  7. Scoop into greased or lined muffin tin.
  8. Bake for about 12  minutes until baked through.
