Sweet Potato Black Bean Tacos:

Black bean sweet potato and cheese tacos are a simple classic Tex-Mex dish. They are inexpensive, full of protein and fiber, and a great vegetarian option. They can be eaten for lunch or dinner and are so fast and easy to make, amateur chefs can whip them up in no time. These black bean sweet potato and cheese tacos are a twist on the traditional bean and cheese taco, adding sweet potatoes to the mix. This simple addition increases the nutrient content, and keeps all the Tex-Mex flavor.

Sweet Potato Black beans are high in both fiber and protein. Beans, unlike most other foods, can be considered a vegetable or a protein when meal planning. Black beans are an excellent source of iron and magnesium. With 70 g of magnesium in 1 cup of cooked beans, they provide almost 25% of the recommended daily value. They also contain 64% of the daily recommended value of folate. Folate is an essential B vitamin (B 9) that is used in the body for cell growth and function.

How to Sweet Potato Black Bean and Cheese Tacos:

Sweet potatoes are easy to bake in the oven or in an Instant Pot, they can even be peeled, cubed and steamed if you need them cooked in a hurry. Baking times for sweet potatoes will vary depending on their size. If baking them in the oven, wash the sweet potatoes and bake at 425 degrees for 40-50 minutes depending on size. If you are in a rush, peel and cube the sweet potatoes and steam until tender, about 10-15 minutes.

Avocados are a nutrient powerhouse. They are full of fiber, good fats, and tons of micronutrients. Avocados are high in vitamin C, A, and K, and multiple B vitamins. They are also high in potassium and folate. Adding avocados to these black bean sweet potato and cheese tacos boosts the nutrition level.

How to make Black Bean Sweet Potato tacos: 

  • In a saucepan over medium heat add beans, sweet potato puree, lime juice, garlic powder, cumin, chili powder, onion powder, salt and pepper. Mix well and heat through. While mixing using a wooden spoon, mash beans and sweet potatoes together until they are a fairly uniform texture.
  • Preheat oven to 450 degrees
  • Spoon about ¼ cup of bean and sweet potato mixture into each tortilla and add 2 tablespoons shredded cheese.
  • Fold tortilla in half and lay flat on 2 cookie sheets.

  • Bake for 8-10 minutes flipping tortillas over after about 5 minutes.

These black bean sweet potato tacos are excellent as is, but if you are looking to spice them up and make them a little more interesting, serve them with salsa, fresh avocado, and creamy yogurt sauce. This yogurt sauce is loaded with flavor and lower in calories than sour cream. The Greek yogurt also adds extra protein.

  • To make the yogurt sauce mix ½ cup plain greek yogurt with 1 teaspoon lime juice and 1 teaspoon taco seasoning.

Black Bean Sweet Potato and Cheese Tacos Recipe

Servings: 8 Prep Time: 20 Minutes Cook Time: 10 Minutes Total Time: 30 Minutes

Ingredients of Black Bean Sweet Potato and Cheese:

  • 2 cups black beans drained
  • 2 cups sweet potato puree
  • Juice of 1 lime
  • 2 teaspoons garlic powder
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • 1 teaspoon cumin
  • 2 teaspoons chili powder
  • 1 teaspoon onion powder
  • 2 cups low fat shredded cheese
  • 16 fajita size flour tortillas  
  • 1 Avocado cubed

Instructions sweet potato black bean recipe:

  1. In a saucepan over medium heat add beans, sweet potato puree, lime juice, garlic powder, cumin, chili powder, onion powder, salt and pepper.
  2. Mix well and heat through. While mixing using a wooden spoon, mash beans and sweet potatoes together until they are a fairly uniform texture.
  3. Preheat the oven to 450 degrees.
  4. Spoon about ¼ cup of bean and sweet potato mixture into each tortilla and add 2 tablespoons shredded cheese.

  6. Bake for 8-10 minutes flipping tortillas over after about 5 minutes.
  7. In a small bowl mix plain Greek yogurt, taco seasoning, and 1 tsp lime juice. Mix well.
  8. Drizzle sauce inside the taco or dip the taco in it. Serve with salsa and fresh avocado.

Note about Black Bean Chili Sweet Potatos:

You can also use the black bean and sweet potato mixture to create yummy tostadas. Instead of a tortilla put the mixture on a tostada and sprinkle cheese on top. Broil for a few minutes to melt cheese and top with lettuce, tomatoes, avocado, and any desired sauces. These tacos are also DASH diet friendly.
