Chicken Fajita Quesadilla Recipe:
Chicken Fajita Quesadillas, a crisp tortilla filled with flavorful chicken, onion, peppers, and melty cheese all dipped in a creamy Tex-Mex yogurt sauce. This meal makes a great easy lunch or family dinner. Garnishes of salsa, avocados, and guacamole add even more to this flavor party. This recipe is simple to make and is done in less than 30 minutes.
How to Make – Steps Cooking Chicken Fajita Quesadilla:
- Slice bell peppers, onions, and chicken into very thin slices.
- Heat a medium to large sized frying pan on medium to medium high heat.
- Add a small amount of oil to the pan. Then add in the bell peppers and onions. While they are cooking add fajita seasoning. Once the onions are translucent add the chicken and cook until no longer pink.
- Heat a separate pan on medium to medium low heat.
- On a tortilla layer low-fat cheese, chicken and pepper mixture, more cheese and another tortilla. Place the tortilla in the clean pan and cook for one to two minutes per side.
As far as taco and fajita seasonings go, there are so many to choose from and so many recipes you can find to make your own combination of spices. Both normally have chili powder, cumin, garlic powder, onion powder, paprika, and oregano or coriander. The ratios of these spices tends to vary with taco seasoning generally having more chili powder and fajita seasoning having more cumin. If you have a taco seasoning you love, use it. The truth is it doesn’t really matter if you use taco or fajita seasoning as long as you like the flavors you are cooking with.
The thing that takes these chicken fajita quesadillas over the top is the Tex-Mex yogurt sauce. It only takes about 2 minutes to make and it is well worth the effort.
- In a small bowl mix plain Greek yogurt, 1 tsp taco seasoning, and 1 tsp lime juice.
- Mix well
Using plain Greek yogurt instead of sour cream helps reduce the fat and calories in these chicken fajita quesadillas. Using low fat cheese in the quesadilla also helps reduce calories. This is a DASH diet friendly recipe.

Ingredients Chicken Fajita Quesadilla:
- 2 chicken breasts
- ½ yellow onion
- 1 bell pepper
- 2 Tablespoons plus one teaspoon Taco or Fajita seasoning
- 1 teaspoon Lime Juice
- Low fat cheddar cheese grated
- 12 tortillas
- ½ cup plain Greek yogurt
Instructions Chicken Fajita Quesadilla:

- Heat a medium to large sized frying pan on medium to medium high heat.
- Add a small amount of oil to the pan. Then add in the bell peppers, onions, and 2 Tablespoons fajita seasoning.
- Once the onions are translucent add the chicken and cook until no longer pink.
- Heat a separate pan on medium to medium low heat.
- On a tortilla, layer low-fat cheese, chicken and pepper mixture, more cheese and another tortilla.
- Place the tortilla in the clean pan and cook for one to two minutes per side.
- In a small bowl mix plain greek yogurt, 1 tsp taco seasoning, and 1 tsp lime juice.
- Mix well. Drizzle over finished quesadilla.
- Serve with salsa and avocado.
Note: I love making chicken fajita quesadillas for our family’s “Taco Tuesday”. While not tacos, I do use taco seasoning, so I think it still counts. I love how quickly I can make these up and they are loved by everyone. I like to slice the peppers, onion and chicken very thin and this reduces cooking time. When making these for a larger group, using a griddle instead of a pan to cook the quesadillas can be helpful and save time.
